I haven't forgotten about my blog! Honest, I haven't. Life has just been one big ride for the last few weeks and it feels as if getting the chance to come on here and report back has been sidelined for other adventures.
But return I have!
New Year came and went in a sea of snores. With Miss Boo being tricky at night times I was fast asleep in bed by 10:30pm on New Year's Eve and the husband wasn't long far behind me too.
Next year, this year (!), we shall be more adventurous and see if we can stretch it to the heady delights of midnight. But I'm not making promises!
And as for resolutions......
Well I never like make resolutions whereby I give something up. I always like to take something on when I make a new year's pledge. This year my pledge is to be disciplined. Sadly, lack of blog posts in evidence, my newly hoped for self discipline has yet to kick in, but 'slowly, slowly catchy monkey' as the saying goes.
On the food front: My husband has been more than a little helpful in creating some fabulous toast toppers. These have been great for using up any leftovers and make excellent lunches. Enjoy!
Curried Cod Toast Topper (covers 2 pieces of toast)
Flake half a fillet of cooked cod
1/2 tsp curry powder
1 tbsp cooked peas
1 tbsp mayonnaise
Mix all ingredients together and serve on freshly made toast.
Rosemary Chicken Melt (Serves 4)
1 cooked chicken fillet, diced
1/2 tbsp dried Rosemary
1 - 2 tbsp Mayonnaise
1 Mozzarella ball, sliced
Toast 4 pieces of bread
Mix the chicken, rosemary and mayonnaise together.
Spoon the mix evenly on to the toast, covering all of the toast so none can be burned by grilling.
Cover with sliced Mozzarella.
Cook under a medium grill for 3 - 5 minutes, until the cheese has melted.
